Laure Poulet moved into the vertical farming industry with a desire to “have impact in her work” after she got sick of seeing all the wastefulness that was happening in her retail job.

From Sydney, Australia (via France) this week we hear from Laure who is the Operations Manager at Urban Green Sydney.

After some internet searching, she got into vertical farming and talks passionately about the industry, the need for more education, and how here in Australia we still have a "long way to go" in terms of industry maturity and public awareness.

She wishes “more people knew about [microgreens] and how they are an amazing addition to a dish” highlighting that microgreens aren't just for chefs, they are for people at home too but we need to build more awareness in this space.
